Cane juice, straight off the mill
Most rum starts as molasses, the heavy syrup left after sugar is taken out. Cachaça in Brazil and rhum agricole in the French islands start instead with fresh cane juice, pressed within hours of cutting, which is why they taste green and grassy where an aged Caribbean rum tastes of toffee. The distilleries are small, the harvest is short, and the tour usually ends in the field the cane came from.

The Appleton estate
Appleton sits in a limestone valley in the middle of Jamaica, far enough from both coasts that the visit eats a whole day. Cane has been cut here since the seventeenth century, the water comes out of the rock on the property, and the warehouse holds barrels older than most of the people looking at them.
